Yummy

I have to make recipes lists for my weekly shopping trips, if I don't I have a lost feeling when it comes to what we are going to eat each night.  I find myself standing in front of the freezer with the door open, rifling through the pantry shelves sighing and wishing I had my dear friend Helene here, all the way from Cannes in France to whip us up some provincial delight.  Alas it is not so and hence the reason why I must make recipe lists.  This week I made my lists and last night we feasted on Sesame crusted Salmon with Ponzu dressing.  Yum I hear you say and you are absolutely correct......delicious.
Recipe:
Sesame Crusted Salmon with Ponzu Dressing

2 salmon fillets, skin off
35 grams of black sesame seeds
1 tablespoon vegetable oil
50 gram asian salad leaves

Ponzu Dressing
2 tablespoons Mirin
1 tablespoon Soy Sauce
1/4 cup lime juice

To make the ponzu dressing put all the ingredients into a saucepan and bring to the boil over medium heat.  Remove and let cool.

Press both sides of the salmon with the sesame seeds.  Heat a frying pan over medium to high heat.  Add the oil when hot add the salmon and cook for 3-4minutes each side or to your tastes.  Arrange on the plate with the salad leaves and spoon over the ponzu dressing.  Serves 2.

I use Bok Choy instead of salad leaves, just my personal preference.  The dressing is gorgeous and this is such a light and yet filling meal.  Perfect for summer evening or lunch time treats.

Oh by the way I have Elle for the next  4 nights, serious sleep will be needed to recover but hey what is super nanny to do.  And here are a couple of the shots I have used for the photography course I am doing with Kat.
We had to take at least 50 shots of our subject and tell why we liked the shots and the process.  I began by shooting the flowers but ended up focussing on the water droplets I love droplet shots.
Great fun and a great course.
