SHE PICKED ME!!!!!!!! Pay it Forward competition

I am SOOOOOOO excited!!!!!!  Yesterday I visitied Soul Aperture and Christina was having a pay it forward day.  She had been the recipient of a pay it forward gift parcel some time back  and I love the way she phrased it  "Oh it was a envelope, filled with kindness." and now she is selecting 5 people to pay it forward to.  They in turn would pay it forward to another 5 people.  So since I absolutely adore getting snail mail, I mean come on who doesn't rush out to the mail box when the postie goes by, hoping to get something other than another darn bill, I posted a comment and crossed my fingers hoping I would get chosen. AND I DID, I DID, I DID!!!!!!!!!! She chose me to pay it forward and oh yeah I will get a little surprise in the mail to, I am so excited seriously I could do a little dance, make a little love get down tonight, oh my goodness see like a kid in a candy shop.  SO WHO WANTS TO PLAY!!!!!!!! I love making up little gift boxes and sending parcels out so if you want to join in and be the super excited recipient of a "Special envelope, filled with kindness and sprinkled with love" post a comment and I'll pick 5 people to start playing pay it forward.  See isn't it exciting?!!

Now on to a recipe post..almost a let down isn't it, it's lik Christmas come early.  Ok ok control yourself Kim and be serious here. My recipe is PINENUT CRUSTED HALOUMI
I made this on Friday night to have with some champagne cocktails I made and it is so delicious.  I love, adore, crave, well maybe not crave but I do love Haloumi and this recipe is super delicious, so give it a go with a few drinks.  It is best really eaten immediately, while the cheese is still soft and oozy oh my mouthwatering here.

Recipe:
1/2 cup toasted pine nuts
2 cloves garlic, crushed
1 1/2 cups flat leaf parsley
2 tbsp olive oil
sea salt and cracked black pepper
250g haloumi, sliced
2 tbsp olive oil extra

Place the pine nuts, garlic, parsley, olive oil, sea salt and pepper in the bowl of a small food processor and process in short bursts until just combined.  Spread the pine nut mixture on the haloumi.  Heat the extra olive oil in a large non stick frying pan over high heat.  Cook the haloumi for 1 - 2 minutes each side or until browned.  Serve IMMEDIATELY.  serves 4. Or one really greedy Haloumi addict.
I served mine with a pita bread sprayed with a little olive oil and sprinkled with some tuscan seasoning.  The recipe served it with roasted capsicum (bell peppers) I think a nice little  green salad would be nice too.  Actually I did slice up a beautiful ripe Bosc pear to serve with it and it was fantastic. Bon Appetit.

  1. I have to admit ignorance: what is Haloumi? Your picture makes me want to find out immediately. It looks very yummy.

    Congrats on winning over at Christina's -- I won, too! And I was dancing around the house like a crazy person, causing F. to say, calm down, already. It's awesome, isn't it? I love Christina's art and words -- and I also love snail mail. Great combination...

  2. Ok so Haloumi is a soft or semi-hard Cypriot cheese with a salty flavour, made from either sheep or goats' milk. It tastes nothing like any other goats cheese I have had and it is much firmer. You can cut it easily. It is so delicious when it is cooked and can be pan fried, it keeps it shape and is great tossed through a green salad, with sun dried tomatoes olives etc. It is exciting isn't it to be a winner.

  3. I didn't know what Haloumi was either, but I looked it up. Interesting! Sounds like a delicious cheese to experiment with!
